As in cooking, we carefully select terroirs and grape varieties to best express the original flavours of each appellation in a fruity, expressive style with silky tannins. Each cuvée is enjoyable from the moment it is bottled. The final blending is carried out with Chefs Disciples d'Escoffier, so that each wine is associated with the world of gastronomy from the start.
Terroir
Cru Vacqueyras is a blend of wines from various parts of the appellation with different terroirs: soils with river stones on the surface, zaffer, and deep clay. Syrah and Grenache display all their power and depth on the Plateau de la Ponche north of the village and the Plateau des Garrigues located further west, in the heart of the Fontimple section.
Vinification
Our vineyard management and winemaking methods, handed down through several generations, make the very most of the Vacqueyras terroir. Our cellarmaster carefully tastes all the vats and selects the best. Fermentation takes place in temperature-controlled vats to retain a maximum aroma.

Serving
Best served at 18°C. This wine is enjoyable young, but has an ageing potential of 5 to 7 years.
Tasting
The color is purple and betrays a juvenile vintage. This Vacqueyras is immediately charming: its nose of fresh red and black berries is an invitation to taste. The matter is certainly concentrated, but it is an explosion of fruit juices that seem to crackle in a mouth that is instantly conquered. A smoothie of fermented red and black fruits, sprinkled with a few intense spices, is the sensation left by this long-lasting wine, which augurs well for years to come. To be decanted 1 hour before serving at 17°C.

Food pairings
You can taste it with a veal piccata with fresh pasta will be original and adapted. A Japanese style meat preparation would be an exotic and audacious alternative: beef tataki served with japonica rice, sweet and sour sauce. For the vegans, let's go back to Italy: penne rigate served with tomato sauce with basil and eggplant balls will make a successful marriage!
