Terroir
Sediment soils from the Tertiary era at the base of the Ventoux mountain: limestone, sand and clay covered with rolled pebbles.
Vinification
Daily délestage (rack and return) and cooling of the must. The wine undergoes short maceration (8 days). Ageing is also short to develop fruitiness.
