Located on the heights of the southern part of the Costières de Nimes appellation, this property was created by hermit monks in the 12th century. It became a wine estate after the French revolution and is owned for three generations by the Castillon family. Certified Organic since 2020, the estate is now converting to biodynamic practices.
Terroir
Terroir enriched with Durancian pebbles accumulated during the Quaternary era.
In the vineyard
Average age of the vines: 25 years.
Winemaking
Cooling of the harvest. Direct pressing rosé. Thermo-regulated fermentation.
Ageing
Aging on the lees 3 months.
