Terroir
Éloquence, a great wine from Gigondas, is made from old Grenache vines that grow on sunny slopes at the foot of the Dentelles de Montmirail. Consisting of limestone and a layer of blue clay, the soil produces outstandingly rich, complex wines.
Winemaking
Long fermentation (20-30 days) with daily pumping over and «délestage» (rack and return). Temperature control and regular tasting throughout theprocess to find the optimum balance between fruit and structure.
Ageing
Ageing: 9 months in oak barrels and 9 months in vat.

Advice

Serving
Decanting 1-2 hours before the meal will enable this wine to express its full personality. While impressive young, it needs 4-5 years to reach its peak.
Tasting
Deep ruby-red colour and a powerful nose with notes of blackcurrant and subtle hints of toast, spice and garrigue. Strong, yet elegant and smooth on the palate with flavours of black fruit, mocha and liquorice. The very long aftertaste confirms the quality of this great wine.
Food pairings
This fine wine is the perfect accompaniment to truffle ravioli, veal chop with chanterelle mushrooms, mature cheeses, and dark chocolate deserts.
