After a traditional vinification, where our Winemaker seeks the finest expression of the fruit, he proceeds with the dealcoholization of the juices through cold evaporation. This technique preserves all the qualities of the original wine as it involves no external elements. Moreover, it's environmentally friendly as it doesn't consume any water.
