As in cooking, we carefully select terroirs and grape varieties to best express the original flavours of each appellation in a fruity, expressive style with silky tannins. Each cuvée is enjoyable from the moment it is bottled. The final blending is carried out with Chefs Disciples d'Escoffier, so that each wine is associated with the world of gastronomy from the start.
Terroir
The terroirs that produce our Côtes-du-Rhône consist mainly of limestone soil with clay subsoil, which accounts for the wine’s rich character.
Vinification
Short cold pre-fermentation maceration locks in fresh fruit aromas. Fermentation takes place at 25°C and is conducted in such a way as to enhance this intrinsic fruitiness. Pumping over is done twice a day, and can alternate with rack and return.
Ageing
The wine is aged in concrete vats with regular racking until bottling in spring.

Serving
Best enjoyed young and served at 12-14°C.
Tasting
Intense color with a purple hue, sparkling reflections. Nose of fresh black fruits: blackcurrant, blueberries, blueberries. A hint of undergrowth too, a pleasant impression of a walk in the forest! The mouth is fleshy, the fruits of the forest are there, some generous spices too, a body with tight tannins that bring a certain seriousness to the finish. A well-constituted wine, to be opened one hour before and served at 17°C.

Food pairings
The structure of the wine evokes "lamb's lettuce"; meat that requires a certain texture will be perfect. Bavette or onglet, preferably cooked rare or medium rare; accompany them with a pepper sauce that will enhance the spicy profile of the wine, and legumes: beans, beans, lentils... The floury point will sparkle with the tannins of the wine. Finally for the vegans: a Mexican-style veggie wrap with red beans and hot spices will be delicious!
