Presentation
The Popes in Avignon decided to spend their summers in this château overlooking the small village of Châteauneuf du Pape in the 14th century. It was they who launched the winegrowing vocation of this tremendous terroir where vestiges of medieval times are still to be found. Reflecting the best of a fine terroir with river stones polished over the centuries, the cuvée Roque Colombe expresses all the elegance of old Grenache vines on terraces in the northern part of the appellation.
Terroir
Rocky and sandy soil.
Vinification
The grapes are handpicked into small crates at dawn to take advantage of the cool morning temperatures, and the whole bunches arrive at the cellar less than half an hour later. After pneumatic pressing and cold settling, temperature-controlled alcoholic fermentation lasts 8-10 days.
Ageing
The wine is then aged for 6-8 months, partly in barrel and partly in stainless steel vats.cuve inox.

Serving
Il est à carafer une heure et à servir à température ambiante. Ce vin s’apprécie dans sa jeunesse, mais 5 à 7 années de vieillissement lui laisseront le temps d’exprimer tout son potentiel.
Tasting
Ce vin dévoile un bouquet complexe où se mêlent des notes légèrement citronnées de fleurs blanches et de genêts alliées à des arômes de poires et de pistaches.
Food pairings
Il se mariera idéalement avec un croustillant de bar au foie gras ou un carpaccio de thon.
