The wine
The Cru Vacqueyras mainly settles at the foot of the Massif des Dentelles de Montmirail in the Rhône Valley. This majestic mountain range has given rise to real geological nuggets. The plot cuvée "La Ponche" comes from a micro terroir identified by generations of artisan-winegrowers as an extremely friable soil where the roots can easily dig deep to go in search of freshness and essential minerals for development. of the vine.

Altitude of the vineyard: 150 meters.
Terroir
A mixed soil with a large part of clay and silt. Located north of the Vacqueyras appellation, on the Ponche plateau.

Vinification
Vinification in stainless steel vats with real mastery of temperatures between 27 and 29 ° C only. With an average duration of 10 days, fermentation is followed by pumping over twice a day to promote the extraction of anthocyanins, aromas and tannins. In addition, we have taken care to keep 20% whole bunches on the Carignan to provide supple and melting tannins which are found in the solid parts of the bunches. The total duration of the vatting is about 25 days before running off.
Maturing
30% of the wine is aged in barrels of 1, 2 and 3 wines. Finally, the rest of the wine is stored in concrete vats. The final blend is made after 12 months and the bottling the following spring.

Advice

Tasting notes
A very nice finesse in this wine, a lot of complexity in terms of aromas and a lot of power. There are aromas of ripe fruit, black fruit coulis and sweet notes of spices. The palate is greedy and the tannins are delicately coated and the finish is long.

This wine will do wonders with beautiful red meats and typical Provençal dishes.
